  • Good insulation which must be foamed in place to avoid entry of heat through the cabinet walls
  • Correctly fabricated plumb doors which are well adjusted with good quality gaskets to provide a perfect seal which will not allow moisture and hot air to enter.
  • The defrost water drainpipe must have a P –trap to prevent the ingress of water back into the freezer chamber.

The air has to turn direction 4 times in order to pass over the food, cool the product, then get cooled again in the evaporator and return to the product. For this, all corners need to be coved at a suitable radius to avoid turbulence & a drop in air velocity. Air flow should be unidirectional throughout to prevent turbulence.

Also, air passage needs to be just adequate so as to ensure air passes over the entire food and cools it without getting bypassed around the product. Air velocity should be ~1200 feet per minute.
